Tequila brings something no other spirit does: a bright, vegetal, slightly peppery edge that cuts through citrus and salt in a way vodka or gin can't. That's why the Margarita is one of the most-ordered cocktails in the world — and why the Paloma, Tommy's Margarita and Mezcal Negroni have followed it onto every modern menu.
Use 100% agave tequila — blanco (silver) for fresh, sharp drinks and reposado for slightly rounder, oak-tinged versions. Mezcal is tequila's smoky cousin and slots into many of the same recipes.
Who it's for
Anyone who likes citrus-led drinks with a bit of bite. Tequila rewards good lime, good salt and not too much sugar.
How to choose
Classic short and sour? Margarita. Long and grapefruit-led? Paloma. Spirit-forward and dry? Mezcal Negroni or Oaxaca Old Fashioned. Spice things up with a chilli-rimmed glass.
