- White Rum50 ml
- Lime juice25 ml

Method
- 01Lightly muddle mint with sugar syrup in a highball glass.
- 02Add lime juice and rum.
- 03Fill with crushed ice and stir.
- 04Top with soda water and stir gently.
Bartender's Notes
- Press the mint gently — don't shred it. Tearing the leaves makes the drink bitter.
- Use fresh lime juice. Bottled lime will make it taste flat.
- Crushed ice dilutes faster, which is what gives a Mojito its lift.
