- Vermouth is fortified wine — store it in the fridge after opening and replace every couple of months.
- Open mixers as late as possible and pour gently — flat fizz makes a tall drink feel tired.

Common mistakes
- Skimping on ice. A half-full glass dilutes faster and goes warm before you finish it. Fill it.
- Pouring mixers in early or hard. Add them last, down the side of the glass, to keep the fizz.
- Using an old, room-temperature bottle of vermouth. Once opened it oxidises fast — keep it cold.
Variations to try
- Top with tonic water instead of soda for a drier, more bitter finish.
